Zucchini Lasagna Boats

Easy to make zucchini lasagna boats.

Instructions

  • Heat oven to 350 degrees.
  • Trim ends of zucchini and slice lengthwise.
  • Scoop out seeds and put in bowl.
  • Mix seeds with sausage, garlic, bread crumbs, and parmensan cheese until well mixed.
  • Stuff the zucchini with sausage mixture and place into 9×13 baking pan.
  • Pour sauce over zucchini and cover pan with foil.
  • Bake for 45 minutes or until sausage is cooked.
  • Remove foil and top zucchini with mozzarella and place back in oven until melted.

Ingredients

  • 3 zucchinis
  • 1 lb pork sausage
  • 1 cup bread crumbs
  • 1 clove garlic minced
  • One 32 ounce jar spaghetti sauce
  • 1/2 cup grated parmensan cheese
  • 1/2 cup shredded mozzarella cheese
