Zucchini Lasagna Boats
Easy to make zucchini lasagna boats.
Instructions
- Heat oven to 350 degrees.
- Trim ends of zucchini and slice lengthwise.
- Scoop out seeds and put in bowl.
- Mix seeds with sausage, garlic, bread crumbs, and parmensan cheese until well mixed.
- Stuff the zucchini with sausage mixture and place into 9×13 baking pan.
- Pour sauce over zucchini and cover pan with foil.
- Bake for 45 minutes or until sausage is cooked.
- Remove foil and top zucchini with mozzarella and place back in oven until melted.

- 3 zucchinis
- 1 lb pork sausage
- 1 cup bread crumbs
- 1 clove garlic minced
- One 32 ounce jar spaghetti sauce
- 1/2 cup grated parmensan cheese
- 1/2 cup shredded mozzarella cheese
